For the past few weeks, I have been spoiling my body with unnecessary indulgences, such as eating out way too often (which is also hurting my wallet), having one too many cocktails while eating out, and consuming heavy amounts of sugar from tasting new dessert recipes at work. I feel fatigued, my body is dragging me down, and my energy level is low. I also experienced my first bad sugar withdrawal. You know…that feeling you get when your body is craving sugar and the only thing you want in this world is a decadent red velvet cupcake stuffed into your mouth. So what’s a girl to do? Detox Rainbow Chard, Kale and Quinoa Salad

KALE to the rescue! My life would not be the same without this superhero vegetable. I am a big fan of kale recipes, and this one may be the best one I’ve ever come up with. This kale salad is loaded with antioxidants, protein, and fiber, which is why I’ve called it a DETOX salad. It will make you feel fully satisfied without weighing you down, and the nutritional benefits will boost up your energy level.

I found these beautiful bunches of baby rainbow chard at the farmer’s market. The glowing golden and ruby hues of the delicate stalks caught my eye and I knew I had to take them home with me.

Baby Rainbow Chard

Never having made anything with chard before, I was unsure about what to do with them. I knew they were high in nutrients, in fact, rainbow chard has over 13 antioxidants, is a great source of magnesium, potassium, iron, fiber, and offers over 600% the daily recommended value of Vitamin K, which is essential for blood-clotting! If kale were Batman, rainbow chard would be his Robin Hood. Therefore, to take full advantage of this gold mine of precious nutrients, I did not want to mess with them too much. So I combined them with kale and quinoa to make this super-hero, super-detox, super-salad!

Garlic-Avocado-Dressing

To add some Omega-3s I made a creamy Basil-Garlic Avocado dressing that’s super easy to make. Quinoa bulks up the protein and fiber content in this salad, leaving you feeling full and satisfied (which is important when one is trying to detox and not munch on that unopened bag of sweet potato chips sitting in the cupboard).

So if you recently gave in donuts your co-worker brought to work, or did not eat anything involving the color green this week, this salad will give you the energy boost you need to tackle the rest of your week.

Detox Kale and Rainbow Chard Salad with QuinoaDetox Rainbow Chard and Kale Salad

Ingredients:

2 cups baby rainbow chard, chopped into 1/2 strips

2 cups kale, stems removed, chopped into 1/2″ strips

1/3 cup carrot, diced

1 cup cooked red quinoa

Half one red onion, thinly sliced

Half of one tomato, diced

Almond slices for garnish

1/4 cup Feta cheese, optional

Directions:

Prepare one small pot of boiling water. Toss in rainbow chard and boil for 30 seconds. Strain from hot water and immediately transfer to a bowl with ice water. Squeeze out excess water and set aside. In a large bowl, toss remaining ingredients together, except for almonds. Add drained rainbow chard. Toss with Basil Garlic Avocado Dressing, massaging the mixture with your fingers (Don’t worry, the mess is worth it). Top with almond slices and feta cheese (optional).

This salad is also delicious the next day, just keep it chilled and covered in the refridgerator.

Basil Garlic Avocado Dressing

Ingredients:

2 small avocados, pitted and flesh removed

3 cloves garlic, smashed and peeled

4-5 large basil leaves, julienned

Juice of 1 lemon

1/2 tsp salt

Directions:

Combine all ingredients in a food processor and process until smooth or until desired consistency. I like to leave mine a little chunky.
